Orange Roughy With Cucumber Relish
|Canned mandarin orange||11 Ounce, drained (1 Can)|
|Cucumber||1 Small, peeled, seeded and finely chopped|
|White distilled vinegar||1⁄3 Cup (5.33 tbs) (HeinzÂ®)|
|Green onion||1 , minced|
|Snipped fresh dill/1 teaspoon dill weed nonstick cooking spray||1 Tablespoon|
|Orange roughy fillets||4|
Reserve 8 orange sections for garnish; coarsely chop remaining sections and combine with cucumber, vinegar, onion and dill in small bowl.
Spray broiler pan with nonstick cooking spray; place fish on pan.
Spoon 1 tablespoon liquid from cucumber mixture over each fillet.
Broil, 3 to 4 inches from heat source, 8 to 10 minutes or until fish flakes with fork.
