|Malt vinegar||4 Pint (Top Quality)|
|Mixed pickling spice||1⁄4 Pound|
|Salt||1 1⁄2 Tablespoon (1 Dessert Spoon)|
Put the vinegar into an enamel or aluminium pan.
Other metal pans are unsuitable.
Tie the spices together in a muslin bag and put in the vinegar with salt and chopped onion.
Simmer for 10 minutes and strain.
When cold it can be used for pickling cabbage, cauliflower, onions and other vegetables.
Use ot cold or hot.
