Great style Ollie! Good to see you are using good quality Fish Sauce/Nam pla-Golden Boy Brand. It costs just a few pennies more than the chemically treated cheapo nam pla. Yep-easy way to peel ginger, try it with the bowl side up-goes so fast and you don't waste much of the ginger. BTW there are red, green and yellow curries in both Thai and Indian cuisines but the ingredients are drastically different. You need to fry the curry paste first in oil or coconut milk/thick part to develop the flavos. Fish Sauce is made from fermented fish and is wonderful-doesn't taste fishy at all - it just melds the flavours together. Love mussels/moules and this looks yummy! Try addng a few drops of Pernod!! French trick for moules. Watching your video of the moules made me hungry! What wine did you serve? Or was it champagne?
