Poached Perch

Ingredients
  Perch 4
  Salt To Taste
  Vinegar 1 1⁄2 Cup (24 tbs)
  Melted butter 1⁄2 Cup (8 tbs)
  Minced parsley 1⁄4 Cup (4 tbs)
  Pepper 1⁄4 Teaspoon
Directions

Place perch in skillet; add boiling water to just cover perch.
Add salt and vinegar.
Bring to a boil; cover.
Reduce heat; simmer for 12 minutes.
Place perch on platter.
Mix butter, parsley and pepper; pour over perch.
