|Frozen perch fillets||2 Pound|
|Pancake flour||1 Cup (16 tbs)|
|Milk||1⁄2 Cup (8 tbs)|
Thaw perch; wash and drain.
Season to taste.
Combine flour, egg and milk, blending well.
Dip fillets in batter; drain.
Heat shortening in skillet; place fillets in skillet.
Cook for 10 minutes or until golden brown.
Drain on paper towels.
