1. Preheat the oven to 350°F.
2. Skin fillet before preparing.
3. In a large bowl, beat egg whites until stiff.
4. Add seasonings to egg white.
5. Beat the egg yolks lightly.
6. In a well greased shallow baking dish, arrange the fillets.
7. Bake for 20-25 minutes until fish flakes.
8. Pour the beaten egg white over baked fish and top with egg yolk.
9. Bake for another 8-10 minutes until the egg mixture is set.
10. Serve hot.
