Sauteed Perch Fillets
|Perch fillets||2 Pound|
|Black pepper||1⁄4 Teaspoon|
|Flour||1⁄4 Cup (4 tbs)|
|Oil/Butter / margarine||3 Tablespoon|
1. Wipe the fillets with a clean, damp cloth. Mix the salt, pepper and cayenne with the flour. Dip the fillets into the flour.
2. Heat the oil or other fat in a frying pan and cook the fillets in it. Turn them to brown evenly. When cooked and browned, drain on thick paper toweling.
