Breaded Lemon Perch
|Round buttery crackers||20 , crushed to make 1/2 cup|
|White pepper||1⁄8 Teaspoon|
|Margarine/Butter||1⁄4 Cup (4 tbs), melted|
|Lemon juice||2 Tablespoon|
|Perch fillets||1 Pound|
1. Reserve 2 tablespoons cracker crumbs. Mix remaining cracker crumbs, the salt and white pepper. Mix margarine and lemon juice.
2. If fish fillets are large, cut into 4 serving pieces; pat dry. Dip fish into margarine mixture, then into cracker crumbs. Arrange fish, thickest parts to outside edges, on rack in dish; sprinkle with paprika.
3. Microwave uncovered on high 4 to 6 minutes, rotating dish 1/2 turn after 2 minutes, until fish flakes easily with fork. Sprinkle with reserved cracker crumbs. Garnish with lemon slices if desired.
