Stuffed Perch Fillets

  Onion 1 Medium, chopped to make 1/2 cup
  Margarine/Butter 2 Tablespoon
  Soft bread crumbs 1 Cup (16 tbs) (1 1/2 Slices Bread)
  Salt 3⁄4 Teaspoon
  Ground nutmeg 1⁄4 Teaspoon
  Egg 1 , slightly beaten
  Perch fillets 1 Pound
  Margarine/Butter 1 Tablespoon, melted
  Vinegar 1 1⁄2 Teaspoon
  Paprika To Taste
  Chopped fresh parsley 1 Tablespoon

1. Place onion and 2 tablespoons margarine in 1-quart casserole. Microwave uncovered on high about 2 minutes or until crisp-tender. Stir in bread crumbs, 1/4 cup parsley, the salt, nutmeg and egg.
2. If fish fillets are large, cut into 4 serving pieces; pat dry. Spread stuffing evenly over fish. Roll up; arrange seam sides down in circle in round dish, 8 x 1 1/2 inches. Mix 1 tablespoon melted margarine and the vinegar; drizzle over fish. Sprinkle with paprika.
3. Cover tightly and microwave on high 4 to 6 minutes, rotating dish 1/2 turn after 2 minutes, until fish flakes easily with fork. Garnish with parsley.
