Ingredients
  Beef 3⁄4 Pound, sliced
  Oil 3 Tablespoon
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Scallion stalk 1 , cut into 1/2 inch sections
  Garlic 1 Clove (5 gm)
  Green peppers 3 , sliced
  Diced celery 1⁄2 Cup (8 tbs)
  Chicken stock 1 Cup (16 tbs)
For thickening
  Cornstarch 2 Teaspoon, mixed with soy sauce
  Soy sauce 1 Teaspoon, mixed with cornstarch
  Water 1⁄4 Cup (4 tbs)
Directions

Heat a pan with the oil, salt and pepper and when it is very hot, saute the beef for 1 minute, stirring constantly.
Add the scallion, garlic and green peppers.
Stir once or twice and then add the celery and the chicken stock slowly.
Cover the pan and turn down the heat and simmer for 10 minutes.
Add the thickening to the meat, and when the gravy is thick and smooth, turn into a shallow bowl and serve immediately
