Beef, Onion & Rice Stuffed Peppers's picture
Stuffed peppers with beef and rice makes a gret side dish that can be served for a dinner or lunch party. Colorful and light, the stuffed peppers are flavored with tomato sauce and worcestershire sauce and are roasted oven for a tender yet crisp texture.
  Green peppers/2 small green peppers 1 Large
  Ground beef 1⁄2 Pound
  Packaged precooked rice 1⁄4 Cup (4 tbs), uncooked
  Salt 1⁄2 Teaspoon
  Pepper 1 Dash
  Worcestershire sauce 1⁄2 Teaspoon
  Chopped onion 1 Tablespoon
  Egg 1
  Canned tomato sauce with cheese 8 Ounce

Halve large pepper or cut tops off small ones; remove seeds and membranes.
Precook peppers in boiling salted water about 5 minutes; drain.
Combine ground beef, rice, salt, pepper, Worcestershire sauce, onion, egg, and 1/4 cup of the tomato sauce; mix thoroughly.
Stuff peppers and stand upright in very small casserole.
Pour remaining tomato sauce over stuffed peppers.
Cover and bake in a moderate oven (350°) for 45 to 50 minutes or till done.
Baste peppers with sauce 2 or 3 times during baking.
