Jellied Green Pepper Rings
|Green peppers||4 Large|
|Lemon gelatin||1 Tablespoon|
|Chopped celery||1 Cup (16 tbs)|
|Chopped carrots||1 Cup (16 tbs)|
|Chopped cucumbers||1 Cup (16 tbs)|
Cut stem ends from green peppers; remove seeds.
Dis- solve gelatin in 2 cups boiling water; chill until slightly thickened.
Add all remaining ingredients; spoon mixture into pepper shells.
Chill until firm; cut each pepper crosswise into 6 slices.
May be served on salad greens and garnished with radish roses and mayonnaise.
