Microwave Sauteed Peppers

Ingredients
  Green pepper strips 1 Cup (16 tbs) (1/4x2-inches)
  Sweet red pepper strips 1 Cup (16 tbs) (1/4x2-inches)
  Fresh mushrooms 1 Cup (16 tbs), sliced
  Olive oil 2 Tablespoon
  Garlic 1 Clove (5 gm), pressed or minced
  Pimiento 1 Tablespoon, chopped (optional)
  Salt 1⁄4 Teaspoon
  Pepper 1 Dash
Directions

MAKING
1. In a 2 quart casserole, take green and red pepper strips and mushrooms. Mix it well.
2. Add olive oil, garlic, pimiento, salt and pepper. Toss it.
3. Cover and microwave at High for 4 to 6 minutes, or until peppers are tender-crisp. Remember to stir it once or twice at regular intervals during cooking.

SERVING
4. Serve Sauteed Peppers sprinkled with grated feta cheese.
