Roasted Peppers With Capers
|Red bell pepper||To Taste|
|Green bell pepper||To Taste|
|Yellow bell pepper||To Taste|
|Basil||1 Tablespoon, chopped|
|Capers||1 Tablespoon, rinsed|
|Olive oil||2 Teaspoon, divided|
|Ground pepper||1 Dash|
|Garlic||1 Clove (5 gm)|
1.Preheat the broiler.
2. Take baking sheets lined with heavy duty foil. Place peppers on the sheets and broil them after placing sheet about 3 inches from heat.
3.Keep turning peppers to ensure that peppers are charred in all sides. Let cool for about 15 minutes.
4. Take a mixing bowl fitted with a strainer. Peel peppers in this such that the juice drip into the bowl.
5.Discard the stems ends and seeds.
6.Once peeled, cut pepper into 1/2 inch wide strips and add to bowl with juice. 7.Also add in capers, basil, 1 teaspoon oil, ground pepper and stir well.
8.In a small skillet, heat remaining oil, add in garlic and stir cook for about 1 minute.
9. Now, add the pepper mixture and stir well.
