Three Coloured Peppers

Ingredients
  Groundnut oil/Vegetable oil 1 Tablespoon
  Celery sticks 2 , cut into matchsticks
  Red pepper 1 Small, cored, deseeded and cut lengthways into matchsticks
  Green pepper 1 Small, cored, deseeded and cut lengthways into matchsticks
  Yellow pepper 1 Small, cored, deseeded and cut lengthways into matchsticks
  Courgettes 2 , cut into matchsticks
  Pecan nuts 2 Ounce, finely chopped (50 Gram)
For dressing
  Lime juice 2 Tablespoon
  Olive oil 1 Tablespoon
  Anise flavored liqueur 1 Tablespoon
  Garlic 1 Clove (5 gm), crushed
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1) In a large bowl, add all the dressing ingredients. Thoroughly combine and set aside.

MAKING
2) In a wok, add oil to heat up until hot over moderate heat.
3) Add the celery to stir-fry for 2 minutes.
4) Next, add peppers and stir-fry for 1 minute.
5) Finally add the courgettes and stir-fry for another 2-3 minutes.
6) Place the stir-fried ingredients into the large bowl of dressing. Thoroughly toss to combine.
7) Cover with a lid or plastic wrap and place inside refrigerator to chill for 2 hours.

SERVING
8) Serve chilled by sprinkling with the chopped pecan nuts.
