Baked Stuffed Bell Peppers

Ingredients
  Bell peppers 4 Large
  Butter 1 Tablespoon
  Carrot 1 , grated
  Cabbage head 1⁄4 Small, shredded
  Celery stalk 1 , finely chopped
  Stalk celery 1 , finely chopped
  Zucchini 1⁄2 Medium, grated
  Grated zucchini 1⁄2 Medium
  Chopped cauliflower 1⁄4
  Cauliflower 1⁄4 , chopped
  Onion 1⁄2 Medium, chopped
  Oregano 1 Teaspoon
  Garlic 1 Clove (5 gm), mashed
  Tomato 1 , chopped
Directions

MAKING
1 Cut top off the bell pepper and remove the seeds and pulp.
2 Steam the bell peppers, and tops, for 5 minutes.
3 In a large nonstick skillet, melt butter.
4 Add the remaining ingredients except tomato, and saute until tender.
5 Add tomato and saute for another 1 minute.
6 Stuff the peppers with this mixture and cover with the tops.
7 Bake in a preheated 350 degrees farenheit oven for 30 minutes, until tender when pierced with a fork.

SERVING
8 Makes a great side dish.
