Mexican Style Stuffed Bell Peppers

This Mexican-style recipe features garbanzo beans, and works great as a healthy side dish or as a dinner entree.
Ingredients
  Bell peppers 2
  Chickpeas 1 Cup (16 tbs)
  Walnuts 1⁄2 Cup (8 tbs)
  Avocado 1
  Clove garlic 1 Clove (5 gm)
  Lime juice 1
  Olive oil 1 Teaspoon
  Salt 1 1⁄3 Teaspoon
  Pepper 1 1⁄3 Teaspoon
  Cayenne pepper 1 1⁄3 Teaspoon
  Cumin 2 Teaspoon
Directions

Combine all of the ingredients except for the bell peppers into a food processor and blend into chunky and thoroughly combined. Stuff each bell pepper with about two tablespoons of the chickpea mixture. Top with salsa and corn if desired.
