Grilled Pepper And Squash
|Sweet red pepper||1 Large, seeded and cut into wide strips|
|Yellow squash||2 Small, cut into 1/4-inch-thick slices|
|Zucchini||1 Medium, cut into 1/4-inch-thick slices|
|Purple onion||1 , cut into wedges|
|Fresh rosemary||2 Teaspoon|
|Vegetable cooking spray||1|
1. Combine first 5 ingredients in a large bowl, tossing gently to combine.
2. Coat grill basket with cooking spray. Place vegetable mixture in basket. Grill over medium-hot coals (350° to 400°) 5 minutes; turn basket, and grill 5 additional minutes.
