Spiced Bulgar Wheat With Roasted Peppers

Ingredients
  Bulgar wheat 8 Ounce (200 Gram)
  Hot vegetable stock 9 Fluid Ounce (250 Milliliter)
  Moroccan spice mix/Large pinch each ground cumin and ground cinnamon 1⁄2 Teaspoon
  Lemon zest 1
  Lemon 1⁄2 , juiced
  Olive oil 1 Tablespoon
  Red onion 1⁄2 , finely sliced
  Canned chickpeas 400 Gram, drained
  Roasted peppers 210 Gram, roasted (Jar)
  Coriander 1⁄2 Bunch (50 gm) (Small Bunch, Leaves Only)
Directions

1. 1n a large microwave proof bowl, cover bulghar wheat with stock. Cover with cling film, then microwave on High for 4 mins. Set aside, covered; it will absorb the stock within another 5 mins.
2. Make a dressing with spice mix, lemon zest and juice and olive oil, then season to taste. Add the onion, chickpeas, peppers and coriander, toss through the cooked bulghar wheat, then serve warm or cold.
