Henry Creel'S Pepper Hash
|Sweet green peppers||12 Medium (1 Dozen, 7 Cups Ground)|
|Sweet red peppers||12 Medium (1 Dozen, 7 Cups Ground)|
|Onions||2 Medium (1 Cup Ground)|
|Boiling water||1 Quart|
|Cider vinegar||2 Cup (32 tbs)|
|Sugar||2 Cup (32 tbs)|
1. Prepare the peppers. For this, wash them, cut out the stems and remove the seeds. Put through a food chopper, using the coarse blade.
2. Peel the onions and put them through a food chopper, using the coarse blade.
3. Add the onion to the peppers. Add boiling water to cover and let stand ten minutes. Drain in a bag overnight or eight hours. Discard the liquid.
4. Add the vinegar, sugar and salt. Bring to the boiling point and boil twenty minutes. Pour into hot sterile jars and seal at once.
