Herbed Rice & Beef Stuffed Green Peppers

|Cooked rice||2 Cup (32 tbs)|
|Chopped green pepper||1 Cup (16 tbs)|
|Minced onions||1 Cup (16 tbs)|
|Catsup||1⁄2 Cup (8 tbs)|
|Fresh ground black pepper||1⁄4 Teaspoon|
|Dried thyme/1 teaspoon fresh thyme, chopped||1⁄2 Teaspoon|
|Tomato juice||2 Cup (32 tbs)|
|Water||2 Cup (32 tbs)|
Mix together well the beef, rice, chopped green pepper, onions, catsup, salt, pepper, thyme, and eggs.
Cut the stem ends off the green peppers, seed them, stuff them with the meat mixture, and arrange in a shallow casserole or baking pan.
Mix the tomato juice and water, pour over the peppers, and bake in a hot oven, 425°, until done—about 30 minutes, or until well browned.
