Vegetarian Stuffed Green Peppers

Ingredients
  Green peppers 4
  Vegetable oil 1 Tablespoon
  Chopped onion 1 1⁄2 Cup (24 tbs)
  Garlic 1 Clove (5 gm), chopped
  Ripe tomatoes 2 Large, chopped
  Cooked brown rice 1 1⁄2 Cup (24 tbs)
  Chili powder 1 Tablespoon
  Salt To Taste
  Black pepper To Taste
  Grated sharp cheddar cheese 3⁄4 Cup (12 tbs)
Directions

Slice peppers in half; remove stalks and seeds.
Steam until just tender.
Saute'onion and garlic in oil until onion is translucent.
Add tomatoes; heat until mixture is well blended and tender.
Mix with rice.
Add seasonings to taste.
Preheat oven to 375°.
Place peppers in a lightly greased baking dish.
Spoon mixture into pepper cases, sprinkle grated cheese on top.
Cover and bake for 30 minutes or until cheese melts.
If desired, put dish under broiler for a few minutes to brown slightly
