Fresh Green Pepper Cauliflower Relish

Ingredients
  Cauliflower head 2 Medium
  Green peppers 3 Large
  White onions 16 Small, peeled
  Salt 2 Tablespoon (Curing and salt is washed away)
  Sugar 1 1⁄4 Cup (20 tbs)
  Turmeric 1 Teaspoon
  Mustard seed 2 Teaspoon
  Mixed pickling spice 3 Tablespoon
  White vinegar 1 1⁄2 Cup (24 tbs)
  Water 1 1⁄2 Cup (24 tbs)
Directions

Remove the leaves from the cauliflower, then wash and separate into flowerets.
Cut the green peppers into thin strips and combine with cauliflower and onions.
Sprinkle the vegetables with the salt, then cover and let stand overnight.
Drain and rinse in cold water.
Combine the sugar, turmeric, mustard seed and pickling spice in a large pot, then stir in the vinegar and water.
Bring to a boil and boil for 5 minutes.
Add the vegetables and boil gently for 10 minutes, stirring occasionally.
Pack in hot sterilized jars.
Seal at once.
