Sausages, Tomatoes, And Peppers
|Sausage links||1 Pound, cut into 1 inch pieces (Mild Or Hot)|
|Vegetable oil||3 Tablespoon|
|Yellow onions||2 Large, peeled and chopped|
|Sweet green peppers||2 Large, cored, seeded, and cut into 1/2-inch strips|
|Tomatoes/1 can (1 pound) tomatoes, drained and chopped||3 Medium, peeled and chopped|
1. Cook the sausages in a heavy 12-inch skillet, uncovered, over moderate heat for 10 minutes, or until browned. Remove the sausages to a platter and set aside. Pour off and discard the drippings from the skillet.
2. Heat the oil in the skillet over moderate heat, add the onions, and cook, stirring occasionally, for 5 minutes, or until soft.
3. Add the peppers, tomatoes, and salt. Return the sausages to the pan, cover, and cook over moderate heat for 10 minutes. Tilt the skillet and spoon the fat from the sauce. Serve hot with pasta, crusty bread, and a green salad with Oil and Vinegar Dressing for Green Salads.
