Simmered Beef Stuffed Peppers

Ingredients
  Green peppers 4
  Lean beef 1 Pound, minced (1/2 Kilogram)
  Garlic 1 Clove (5 gm), crushed
  Onion 1 , finely chopped
  Mushrooms 4 Ounce, chopped (125 Gram)
  Dried mixed herbs 1 Pinch
  Tomato juice 10 Fluid Ounce (300 Milliliter)
Directions

Slice the tops off the stalk end of the peppers and reserve them.
Remove and discard the pith and seeds.
Mix together the beef, garlic, onion, mushrooms, herbs and seasoning to taste.
Spoon the mixture into the peppers and cover with the reserved tops.
Arrange the peppers upright in a saucepan and pour over the tomato juice.
Cover and simmer for 1 hour.
