Homemade Roasted Peppers

Ingredients
  Green peppers 4 Large
  Sweet red peppers 4 Large
  Olive oil/Cooking oil 1⁄4 Cup (4 tbs)
  Lemon juice 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Sliced pitted ripe olives 1⁄3 Cup (5.33 tbs)
Directions

Quarter peppers lengthwise; remove stem and seeds.
Place, peel side up, in broiler pan.
Broil 2 inches from heat about 15 minutes or till peppers are charred.
Immediately place in paper bag; close tightly and allow peppers to cool.
Peel peppers; cut lengthwise into about 1/2-inch-wide strips.
Combine oil, lemon juice, and salt.
Pour over peppers; toss gently.
Cover; let stand at room temperature about 1 hour, stirring occasionally or, refrigerate several hours or overnight.
