Lime And Green Chili Chicken
|Mild green chilies||2 , minced (Fresh / Canned)|
|Green onion||1 , minced|
|Fresh lime juice||1⁄4 Cup (4 tbs)|
|Minced fresh cilantro||1 Tablespoon (Coriander)|
|Chicken||3 1⁄2 Pound|
Combine chilies, green onion, lime juice and cilantro in small bowl.
Loosen skin from chicken breast, thighs and drumsticks with fingers (be careful not to puncture skin).
Rub or spoon sauce under skin.
Roast as directed in basic instructions, omitting wine-paprika mixture.
