Boletus Stuffed Green Peppers
|Green peppers||6 Large|
|Boletus||5 Cup (80 tbs), chopped|
|Cooked rice||1 1⁄2 Cup (24 tbs)|
|Minced onions||1 Cup (16 tbs)|
|Green olives||1⁄4 Cup (4 tbs), sliced|
|Canned tomatoes||2 1⁄2 Cup (40 tbs), drained|
Parboil peppers 5 minutes.
Cut off tops and clean out seeds.
Saute mushrooms and onions in margarine 8 to 10 minutes.
Add rice, olives, tomatoes and seasonings.
Lightly pack into peppers.
Bake 30 minutes at 350°F.
