Beef, Herbs & Rice Stuffed Peppers
|Peppers||6 Medium (Yellow, Green Or Red)|
|Lean ground beef||1 Pound|
|Cooked long grain rice||1 Cup (16 tbs)|
|Onion||1 Cup (16 tbs), chopped|
|Celery||1 Cup (16 tbs), diced|
|Tomato||1 Small, seeded and chopped|
|Garlic||1 Clove (5 gm), minced|
|Condensed tomato soup||1 Can (10 oz)|
|Basil||10 3⁄4 Teaspoon|
|Sharp cheddar cheese||1⁄2 Cup (8 tbs), shredded|
Cut off tops of peppers.
Remove seeds and membrane.
In large bowl, combine beef, rice, onion, celery, tomato, garlic, salt and pepper.
Fill peppers with meat mixture.
Arrange in 2-quart oblong glass baking dish.
Combine soup and basil; pour over peppers.
Microwave at HIGH (10) 20 to 24 minutes.
Sprinkle cheese over peppers.
Let stand, covered,5 minutes to melt cheese.
