Marinated Sweet Pepper Strips

|Olive oil||80 Milliliter (1/3 cup)|
|Sweet red peppers/Green pepper||5 , cut in strips (seeded)|
|Onion||1 Large, finely sliced|
|Vinegar||30 Milliliter (2 tablespoon)|
|Parsley||2 Tablespoon, chopped (30 ml)|
|Garlic||1 Teaspoon, chopped (5 ml)|
|Tarragon||1 Teaspoon, chopped (5 ml)|
– In a skillet, heat oil and saute peppers, then drain and set aside.
– In a bowl, combine other ingredients. Add peppers and soak for a few hours.
