Sweet Pepper Rainbow
|Peppers||4 (Of Different Colors)|
|Tomatoes||2 Medium, peeled and diced|
|Cucumber||1 , peeled, seeded, diced|
|Lemon juice||45 Milliliter (3 Tablespoons)|
|Plain yogurt||60 Milliliter (1/4 Cup)|
|Chopped parsley||15 Milliliter (1 Tablespoon)|
|Garlic||1 Milliliter, finely sliced (1/4 Teaspoon)|
– Clean out peppers and place in a saucepan filled with lightly salted boiling water. Blanch for 5 minutes, then drain. Cut into 1/4 inch (0.5 cm) strips and place in a salad bowl.
– Add tomatoes and cucumbers, and toss lightly.
– In a bowl, mix sauce ingredients and pour over vegetables. Cover and refrigerate for 30 minutes. Arrange on a bed of lettuce and serve as an appetizer.
