Festive Pepper Medley A La Grecque
|Green bell pepper||1 , cut into thin strips|
|Yellow bell pepper||1 , cut into thin strips|
|Red bell pepper||1 , cut into thin strips|
|Olive oil/Vegetable oil||3 Tablespoon|
|Balsamic wine vinegar/Red wine vinegar||2 Teaspoon|
|Chopped fresh oregano/1 teaspoon dried oregano||1 Tablespoon|
|Chopped walnuts||3⁄4 Cup (12 tbs)|
|Olives||1⁄4 Cup (4 tbs) (Greek Or Nicoise)|
|Crumbled feta cheese||1⁄4 Cup (4 tbs)|
|Radicchio leaves/Spinach leaves||5 , garnish|
Arrange bell peppers in microwavable serving dish.
In small bowl, combine oil, water, vinegar, oregano, salt and black pepper; pour over bell peppers.
Sprinkle with walnuts.
Microwave at HIGH (100% power) 5 minutes or until peppers are cooked.
Top with olives and cheese.
