Bacon And Green Pepper Rice

Ingredients
  Bacon slices 6
  Bacon drippings 50 Milliliter (3 Tablespoons)
  Onion 1 Medium, chopped fine
  Green pepper 1 Medium, diced
  Canned tomatoes 19 Ounce (One 540 Milliliters Can)
  Sugar 1⁄2 Teaspoon (2 Milliliters)
  Thyme/Savory 1⁄2 Teaspoon (2 Milliliters)
  Long grain rice 125 Milliliter (1/2 Cup)
  Cheddar cheese 125 Milliliter, grated (1/2 Cup)
Directions

€¢ Place slices of bacon in a dish. Microwave 2 to 3 minutes at HIGH. Place cooked bacon on paper towelling.
€¢ To the fat remaining in the dish add the onion and green pepper. Microwave 3 minutes at HIGH. Stir well.
€¢ Add the tomatoes, sugar, thyme or savory, stir. Add the rice, stir. Cover and microwave 20 minutes at MEDIUM, stirring after 15 minutes and testing for doneness, cooking 5 minutes more if necessary.
€¢ When rice is tender, sprinkle top of casserole with the grated cheese.
€¢ Crumble reserved bacon over all. Microwave 1 minute at HIGH.
