Casserole Of Shrimp Stuffed Peppers

Ingredients
  Peppers 4 Large (Red / Green)
  Butter/Margarine 2 Tablespoon
  Onion 1 Small, peeled chopped
  Cooked rice 1 Cup (16 tbs)
  Shrimp/Small package frozen 1 Can (10 oz)
  Lemon juice 1 Tablespoon
  Broth/Consomme 1 Cup (16 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Preheat oven to 350°F.
Cut slice from stem end of each pepper; remove all seeds and pith.
Heat butter in saute pan.
Add onion; saute until soft.
Add rice and shrimp; season carefully.
Add lemon juice.
Fill peppers with mixture.
Arrange in buttered casserole; add broth.
Cover; cook about 30 minutes, or until tender.
