A healthy, hearty meal doesnt have to be complicated, and it certainly doesnt have to be expensive. Heres a budget-friendly vegan crockpot meal that you can whip up with simple ingredients in no time flat.
Large bell peppers | ||
Brown rice (cooked) | ||
Frozen corn or peas (or both) | ||
A can of rinsed black beans | ||
Canned crushed tomatoes | ||
Fresh garlic clove, minced | ||
Red onion, chopped | ||
Black pepper and sea salt | ||
Cumin powder | ||
Non | stick cooking spray |
Making
Halve peppers, remove seeds, and rinse
Mix brown rice, frozen corn or peas, black beans, garlic, onion, cumin, salt, and pepper
Stuff peppers with mixture
Spray crockpot with non-stick cooking spray
Cook peppers in the crockpot on high for 2 hours
Then, add crushed tomatoes, and cook for another hour
For the last ten minutes, turn off the crockpot and remove the lid
