Preheat the oven to 300 degrees.
Combine egg white and water in a mixing bowl and beat at high speed until frothy but not stiff.
Combine the sugar, salt and cinnamon in a small bowl and mix well.
Add the pecans to the egg white mixture and stir until well coated.
Pour the sugar mixture over the coated pecans and mix well.
Spread on a lipped baking sheet and bake for about 35 minutes, stirring and turning every 15 minutes.
Watch closely and remove before they brown too much.
Store in an airtight container.
