Yam And Pecan Casserole is an amazingly tasty dish. I serve this often as for one of those hearty dinner meals at home. Very filling and delicious, the Yam And Pecan Casserole is something you just shouldn’t miss.
Ingredients
  Yams 4 Medium, cooked peeled and mashed
  Lemon juice 1 Tablespoon
  Grated lemon rind 3 Teaspoon
  Salt 1⁄4 Teaspoon
  Firmly packed brown sugar 1⁄2 Cup (8 tbs)
  Butter 2 Tablespoon (To Grease)
  Brown sugar 2 Tablespoon
  Chopped pecans 2 Tablespoon
Directions

Combine yams, lemon juice, 2 teaspoons ' lemon rind, 1/2 cup pecans, butter, salt, and 1/2 cup brown sugar.
Mix well; put into buttered 1 1/2 quart casserole.
Combine 2 tablespoons brown sugar, 2 tablespoons pecans, and 1 teaspoon grated lemon rind.
Sprinkle over yam mixture.
Bake in 350°F toaster oven 20 minutes.
