Pear And Pork Stir Fry

Ingredients
  Pork shoulder 12 Ounce, trimmed of all visible fat
  Chicken stock 2 Tablespoon
  Low-sodium soy sauce 2 Teaspoon
  Vinegar 1 Teaspoon
  Cornstarch 1 Teaspoon
  Ground cinnamon 1⁄8 Teaspoon
  Canola oil 2 Tablespoon
  Scallions 2 , shredded
  Peeled minced ginger 2 Tablespoon
  Garlic 1 Clove (5 gm), minced
  Pears 2 Large, sliced 1/4 inch thick
  Shredded spinach 1 Cup (16 tbs)
Directions

GETTING READY
1. Freeze the pork for 30 minutes till easy to slice
2. Slice across the grain to make thin slices. Cut these slices into 1-by 2-inch pieces.
3. In a large bowl, place the stock, soy sauce, vinegar, cornstarch, and cinnamon and mix well
4. Add the pork and toss gently. Cover and let stand for 20 minutes.

MAKING
5. In a large nonstick frying pan over medium-high heat, tip in the oil and heat for 2 minutes
6. Add the scallions, ginger, garlic and stir fry for 10 seconds or till the onions are transparent.
7. Add the pork and the marinade and cook for 2-3 minutes.
8. Add the pears and fry again for 1 minute. Add the spinach and let it wilt. This will take one minute

SERVING
9. Serve hot immediately
