|Hard pears||4 Pound (Small Variety)|
|Boiling water||1 Cup (16 tbs)|
|Cinnamon stick||5 (2 Inch Pieces)|
|Whole cloves||1 Tablespoon|
|Whole allspice||1 Tablespoon|
|White sugar||4 1⁄2 Cup (72 tbs)|
|Cider vinegar||2 Cup (32 tbs)|
Peel the pears but leave on the stems if possible.
Simmer the pears 10 minutes in boiling water to cover.
Drain off all the water except 1 cup.
Combine the spices, sugar, vinegar, and 1 cup pear water.
Bring to the boil and let boil 5 minutes.
Add the pears, cover, and cook over medium heat for 10-15 minutes or until the pears are transparent and tender.
Let stand overnight.
Reheat the pears and liquid to the boiling point.
Pack the pears into hot sterilized jars.
Boil up the liquid and pour it over the pears.
Fill the jars to the top.
