Preserved Ginger Pears
|Firm ripe pears||12 Medium|
|Sliced preserved ginger||1⁄4 Cup (4 tbs)|
|Sugar||3 Cup (48 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Lemon juice||1⁄2 Cup (8 tbs)|
1. Cut pears in half; pare; core.
2. Combine ginger, sugar, water and lemon juice in a large skillet; bring to boiling, stirring constantly; add pears. Simmer 10 to 15 minutes, or until tender but still firm enough to hold their shape. Lift from syrup with a slotted spoon; pack into 3 hot, sterilized, pint jars.
3. Cook syrup 15 minutes longer, or until reduced about half; pour over pears in jars to fill to within 1/4 inch of rim. Process in hot-water bath 20 minutes. Cool jars, label and date. Store in a cool, dry place.
