Pears With Tarragon Mayonnaise

  Mayonnaise 1⁄2 Cup (8 tbs) (Thick)
  Cream 4 Tablespoon
  Tarragon wine vinegar 2 Teaspoon
  Salt To Taste
  Cayenne pepper To Taste
  Chopped tarragon 2 Tablespoon
  Lettuce leaves 4
  Ripe pears 4 (Cornice / William)
  Lemon twists 4 (For Garnish)

Put the mayonnaise, cream and vinegar into a bowl, with salt and cayenne pepper to taste.
Stir in the chopped tarragon and mix well.
Cover and set aside.
Arrange the lettuce leaves on 4 individual plates.
Peel the pears and scoop out the cores with a teaspoon.
Place one pear on each plate.
Spoon over the tarragon mayonnaise and garnish with lemon twists.
Serve chilled.
