Baked Orangey Pears
|Chopped orange segments||1⁄2 Cup (8 tbs)|
|Chopped golden raisins||1⁄4 Cup (4 tbs)|
|Grated lemon rind||1 Teaspoon|
|Orange juice||2 Cup (32 tbs)|
1. Preheat oven to 350Â° F.
2. Remove core from each pear with apple corer; set pears in four 10-ounce custard cups. Combine chopped oranges, golden raisins, lemon rind and cinnamon in small bowl; stuff center of each pear with one-fourth mixture. Pour 1/2 cup orange juice around each.
3. Set custard cups on large baking sheet. Bake for 20 to 30 minutes, until pears are tender, basting frequently with orange juice. Cool slightly before serving.
