Raspberry Poached Pears
|Frozen raspberries||20 Ounce, thawed and drained (2 Packages, 10 Ounce Each)|
|Creme de cassis||1⁄2 Cup (8 tbs)|
|Finely chopped pistachios||1⁄4 Cup (4 tbs)|
Puree raspberries until smooth in processor or blender.
Strain through fine sieve to remove seeds.
Add creme de cassis to puree. (Can be prepared ahead.) Peel pears.
Core from bottom, leaving stem intact.
Cut thin slice from bottom so pears stand upright.
Arrange pears upright in large saucepan.
Pour raspberry mixture over.
Bring to simmer, then cover and simmer gently until tender, about 8 to 10 minutes.
Remove pears from pan.
Cool, then chill.
Transfer cooking liquid to smaller saucepan and boil until reduced to thick syrup, about 10 to 12 minutes.
