Pare, quarter, core, and cut pears into thin slices.
Squeeze lemon juice, then cut rind into thin slices.
Combine both rind and juice with water, sugar, and small chunks of ginger.
Cook over a low heat for 45 minutes or until mixture is clear and syrupy.
Add pears and continue simmering for 45 minutes (the pears should be transparent and the syrup quite thick).
Pour into sterilized jars and seal.
