Sweet Spiced Pears
|Ripe pears||8 Pound (Use Firm)|
|Cider vinegar||2 Cup (32 tbs)|
|Packed brown sugar||4 Cup (64 tbs)|
|Cinnamon stick||2 (3 Inch Each)|
|Whole cloves||2 Tablespoon|
Pare them and leave whole if they are small.
If large, halve and core them.
Combine remaining ingredients (spices tied in spice bag, if desired) in a saucepan.
Bring to boiling; reduce heat and simmer 20 minutes.
Add pears to syrup, a few at a time, and cook gently until just tender (but not soft).
Pack pears into hot sterilized jars; add syrup, leaving headspace.
