Peanut Sesame Chew
|Shelled blanched peanuts||4 Cup (64 tbs)|
|Sugar||1 Cup (16 tbs)|
|Water||3⁄4 Cup (12 tbs)|
|Honey||1 Cup (16 tbs)|
|Butter||1⁄4 Cup (4 tbs)|
|Sesame seeds||1 Cup (16 tbs)|
Spread the peanuts in a shallow flat pan, and toast at 350°F. 10 minutes or until lightly browned.
Pour into a greased bowl.
Mix the next 4 ingredients in a saucepan, and cook slowly until syrup spins a thread, about 40 minutes, or until a candy thermometer registers 250°F.
Sprinkle 1/2 the sesame seeds over the bottom of a greased jelly-roll pan or cookie sheet.
Pour the syrup over the peanuts and remaining seeds.
Mix with a fork, and scrape into the prepared pan.
Spread and flatten with the back of a greased spoon.
Cool, and cut into large bars.
Makes about 56.
