Cold Marinated Peanuts

Ingredients
  Raw peanuts 1 Pound (450 Grams)
  Light soy sauce 3 Tablespoon
  Dark soy sauce 3 Tablespoon
  Garlic 1 Tablespoon, finely chopped
  Cider vinegar/Chinese white rice vinegar 5 Fluid Ounce (150 Milliliter)
  Dry sherry/Rice wine 3 Fluid Ounce (75 Milliliter)
Directions

MAKING
1 Immerse the peanuts in a pot of boiling water for about 2 minutes to blanch.
2 Drain them and allow them to cool.
3 The skins should come off easily.
4 Put the blanched peanuts in a bowl.
5 Mix in all the other ingredients.
6 Let the peanuts marinade in this mixture for at least 2 or 3 hours.
7 Stir from time to time to ensure that the marinade is evenly distributed.
8 Most of it will be absorbed by the peanuts.

SERVING
9 Excellent with Pickled Vegetables as snacks or appetisers.
