Peanut Oat Cookies
|Butter flavored shortening||1 1⁄4 Cup (20 tbs)|
|Chunky peanut butter||1 1⁄4 Cup (20 tbs)|
|Packed brown sugar||1 1⁄2 Cup (24 tbs)|
|Sugar||1 Cup (16 tbs)|
|Old fashioned oats||4 1⁄2 Cup (72 tbs)|
|Baking soda||2 Teaspoon|
|Chopped peanuts||1 Cup (16 tbs)|
In a mixing bowl, cream shortening, peanut butter and sugars.
Add eggs, one at a time, beating well after each addition.
Combine oats and baking soda; gradually add to creamed mixture.
Stir in peanuts.
Drop by tablespoonfuls 2 in apart onto greased baking sheets.
Bake at 350° for 10-12 minutes or until golden brown.
Remove to wire racks to cool.
