Peanut Oat Cookies

Ingredients
  Butter flavored shortening 1 1⁄4 Cup (20 tbs)
  Chunky peanut butter 1 1⁄4 Cup (20 tbs)
  Packed brown sugar 1 1⁄2 Cup (24 tbs)
  Sugar 1 Cup (16 tbs)
  Eggs 3
  Old fashioned oats 4 1⁄2 Cup (72 tbs)
  Baking soda 2 Teaspoon
  Chopped peanuts 1 Cup (16 tbs)
Directions

In a mixing bowl, cream shortening, peanut butter and sugars.
Add eggs, one at a time, beating well after each addition.
Combine oats and baking soda; gradually add to creamed mixture.
Stir in peanuts.
Drop by tablespoonfuls 2 in apart onto greased baking sheets.
Bake at 350° for 10-12 minutes or until golden brown.
Remove to wire racks to cool.
