Soy Peanut Marinade
|Raw peanuts||1 Cup (16 tbs), cooked|
|Soybeans||1⁄2 Cup (8 tbs), cooked|
|Honey||1⁄4 Cup (4 tbs)|
|Apple cider vinegar||1⁄4 Cup (4 tbs)|
|Sesame oil||2 Tablespoon|
|Sesame tahini/Sesame butter||1⁄4 Cup (4 tbs)|
|Dry mustard||1⁄4 Teaspoon|
|Dry tarragon||1⁄4 Teaspoon|
|Chopped parsley||2 Tablespoon|
|Onion||1⁄2 , sliced into thin rings|
|Sesame seeds||2⁄3 Cup (10.67 tbs), toasted|
After the beans are cooked, drain them well.
Combine the honey, vinegar, oil, tahini, salt, herbs, and spices EXCEPT sesame.
Toss the dressing into the cooked peanuts and beans; add the onion rings, cover, and chill several hours or overnight.
Just before serving stir in the sesame seeds and transfer the marinade to a bowl lined with greens.
