Salted Peanut Cookies
|Shortening||1⁄2 Cup (8 tbs)|
|Packed brown sugar||1 Cup (16 tbs)|
|Baking powder||1⁄2 Teaspoon|
|All purpose flour||2 Cup (32 tbs)|
|Quick cooking rolled oats||2 Cup (32 tbs)|
|Rice cereal||1 Cup (16 tbs)|
|Salted spanish peanuts||1 Cup (16 tbs)|
Mix shortening, sugar, eggs, vanilla, soda, baking powder and salt until light and fluffy.
Blend in flour.
Stir in remaining ingredients.
Drop 5 to 8 rounded measuring teaspoonfuls in large ring on wax paper on microwave-proof baking sheet, large dinner plate, pie plate or paper plate.
Drop 1 or 2 in center.
Microwave at 50% (Medium) 1 to 3 1/2 minutes, or just until dry on surface, rotating 1/4 turn every 30 seconds.
Remove cookies as they appear done.
Remove wax paper with cookies on it to countertop or wire rack; cool.
